We all know that it is important to eat healthy food, but we do not have to deny ourselves delicious food. Here are several meals that are both healthy and yummy.
Spaghetti with pistachio nuts, pesto, and spinach
Ingredients: 300 g of whole wheat spaghetti, salt, 2 tablespoons of salted and toasted pistachio nuts, 50 g of spinach, 1 pressed clove of garlic, 1 cup of chopped parsley, 1/4 cup of olive oil, 2 tablespoons of grated Parmesan cheese, 2 tablespoons of lemon juice, ground black pepper.
Preparation: Boil the spinach in salted water (2 minutes). Put it into a bowl of icy water and after that chop it finely. Boil the spaghetti until it’s done. After that shred the pistachio nuts in a blender along with the garlic, add parsley, olive oil, Parmesan, lemon juice, and 1/3 teaspoon of salt and pepper. Mix everything together and after that combine the spaghetti with the pesto.
Low-calorie fettuccine Alfredo
Ingredients: 1 tablespoon of unsalted butter, 1 pressed clove of garlic, 1 teaspoon of lemon zest, 2 teaspoons of flour, 1 glass of milk, salt, 2 tablespoons of low-calorie cream cheese, 3/4 cup of Parmesan cheese, 3 tablespoons of fresh parsley, 350 g of fettuccine, ground black pepper.
Preparation: Melt the butter in a frying pan. Add garlic and lemon zest and stew them for a minute. Add flour and fry for a minute. Stir with a wooden spatula. Add milk and 3/4 teaspoon of salt and simmer it for 3 minutes. After that add cream cheese and Parmesan. After they are melted add parsley and that’s it, the sauce is done. Cook the pasta until it’s done. Combine the pasta with the sauce and enjoy.
